Ingredients:
- 1 lb dried great northern beans or navy beans, rinsed
- 1 meaty ham bone, leftover ham hock, or 2 cups diced cooked ham
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bay leaf
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 6 cups water or low-sodium chicken broth
- Salt to taste (add later, depending on saltiness of the ham)
- Optional: hot sauce or vinegar for serving
