  • 2 large onions, thinly sliced
  • 1 cup buttermilk (or regular milk + splash of vinegar) – for soaking
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 4 tbsp butter or bacon grease
