- 1 tsp dried Italian herbs (or oregano, thyme, basil mix)
- 1 cup cherry tomatoes, halved
- 1 small zucchini, thinly sliced
- 1 small onion, thinly sliced
- 1 cup mozzarella cheese (or feta/goat cheese)
- ½ cup grated Parmesan
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
