Ingredients (Serves 4–6)
For the Salad:
- 8 oz pasta (rotini, penne, or farfalle)
- 2 cups cooked chicken breast, diced or shredded
- 2 cups romaine lettuce, chopped
- ½ cup cherry tomatoes, halved (optional)
- ½ cup croutons
- ¼ cup Parmesan cheese, shaved or grated
- Salt & pepper to taste
For the Caesar Dressing (Homemade Option):
(You can also use ½ cup store-bought Caesar dressing.)
- ½ cup mayonnaise
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- ¼ cup grated Parmesan cheese
- 2–3 anchovy fillets (optional, finely minced)
- 1 tsp Worcestershire sauce
- Salt and black pepper, to taste
