Ingredients:

  • 1 bone-in ribeye steak (about 1.5 to 2 inches thick)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 2-3 cloves garlic (optional, for flavor)
  • Fresh herbs (rosemary or thyme sprigs, optional)
  • 2 tablespoons unsalted butter (optional, for basting)

Instructions:

  1. Bring the Steak to Room Temperature:
    • Take the ribeye steak out of the refrigerator at least 30-60 minutes before cooking to allow it to come to room temperature. This ensures more even cooking.
  2. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  3. Season the Steak:
    • Pat the steak dry with paper towels to remove any excess moisture.
    • Season the ribeye generously with salt and black pepper on both sides.
  4. Sear the Steak:
    • Heat a large, oven-safe skillet or cast-iron pan over medium-high heat.
    • Add olive oil to the pan. Once hot, place the ribeye in the pan.
    • Sear the steak on one side for 2-3 minutes until it develops a golden-brown crust. Optionally, add crushed garlic cloves and fresh herbs to the pan for added flavor.
  5. Flip and Sear the Other Side:
    • Flip the ribeye and sear the other side for an additional 2-3 minutes. If using, spoon melted butter over the steak during this stage for extra richness.
  6. Transfer to the Oven:
    • If not already using an oven-safe skillet, transfer the ribeye to a preheated oven-safe dish or pan.
    • Roast the steak in the preheated oven for about 10-15 minutes for medium-rare or adjust the time according to your preferred doneness.
  7. Check Doneness:
    • Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130-135°F (54-57°C).
  8. Rest the Steak:
    • Once done, remove the ribeye from the oven and let it rest on a cutting board for at least 10 minutes. This allows the juices to redistribute, resulting in a juicier steak.
