Oven Jerk Pork 

This Oven Jerk Pork recipe brings the bold, spicy, and aromatic flavors of Jamaican jerk seasoning to your kitchen. Marinated in a blend of herbs, spices, and hot peppers, the pork is roasted to perfection in the oven, resulting in juicy, tender meat with a flavorful crust. Ingredients:

For the Jerk Marinade:

  • 4-5 garlic cloves
  • 3-4 Scotch bonnet peppers (adjust to taste, can use less for less heat)
  • 1 large onion, chopped
  • 3-4 scallions, chopped
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 1 tablespoon (15 ml) soy sauce
  • 1 tablespoon (15 ml) lime juice
  • 2 tablespoons (30 ml) vinegar (white or apple cider)
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 g) brown sugar
  • 1 tablespoon (15 g) ground allspice
  • 1 teaspoon (5 g) ground cinnamon
  • 1 teaspoon (5 g) ground nutmeg
  • 1 teaspoon (5 g) dried thyme (or 2 teaspoons fresh)
  • 1 teaspoon (5 g) ground black pepper
  • 1 teaspoon (5 g) salt

For the Pork:

  • 2-3 pounds (900-1350 g) pork shoulder or pork butt, trimmed of excess fat and cut into large chunks or left whole
  • Extra salt and pepper, to season the meat
