  • 1/4 cup (50g) sugar
  • 2 tbsp oil
  • 1 small egg
  • 1/2 tsp vinegar
  • 1/2 tsp vanilla
  • Red gel food coloring

White Cheese Mousse:

  • 200g cream cheese or mascarpone
  • 1/2 cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy cream, whipped to soft peaks
  • 2 tsp gelatin + 2 tbsp water (bloomed)

Red Berry Topping:

  • 1 1/2 cups fresh or frozen red berries (raspberries, strawberries, red currants)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch + 1 tbsp water
