  • 1 medium onion, roughly chopped
  • garlic cloves, smashed
  • tomato, chopped
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar (or honey)
