Ingredients:
For the Salmon:
- 4 salmon fillets (skin-on or skinless, about 6 oz each)
- Salt & pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
For the Creamy Sauce:
- 1 tablespoon butter (or use leftover from searing)
- 8 oz mushrooms, sliced (cremini or white button)
- 2 cups fresh spinach
- ¾ cup heavy cream (or half & half for lighter version)
- ¼ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste
- Optional: squeeze of lemon juice or pinch of red pepper flakes
