Smash Burger Recipe

Step 1: Prepare the Ingredients

  1. Divide the ground beef into 4 equal portions (around 4 ounces each), keeping them loosely packed. Do not form them into tight patties; they should be in rough, loose mounds.
  2. Season the beef generously with salt and pepper on the tops and set aside.

Step 2: Heat the Griddle or Skillet

  1. Preheat a cast iron skillet or griddle over medium-high heat until it’s smoking hot. You want the surface to be very hot so that the beef will sear instantly when smashed.

Step 3: Toast the Buns

  1. Butter the cut sides of each bun and place them, butter-side down, on the skillet. Toast until golden brown and crispy, then set aside.

Step 4: Smash the Burgers

  1. Place the beef mounds on the hot skillet, leaving space between each.
  2. Using a heavy spatula, press each mound firmly until it’s very thin (about 1/4 inch thick). Hold the pressurefor at least 10 seconds to ensure the beef makes good contact with the skillet and develops a crust.
  3. Season the exposed side with a bit more salt and pepper, if desired.

Step 5: Cook and Flip

  1. Let the burgers cook for about 1-2 minutes without moving them. You’ll see the edges start to brown and get crispy.
  2. Use the spatula to scrape up each patty, being careful to keep the crispy bits intact, and flip.
  3. Place a slice of American cheese on top of each patty immediately after flipping, so it melts as the second side cooks.
  4. Let the patties cook for another 1-2 minutes, until the cheese is melted and the edges are crispy.

Step 6: Assemble the Burgers

  1. Spread the burger sauce on both sides of the toasted buns.
  2. Place a lettuce leafsliced tomatopickles, and onions on the bottom bun if using.
  3. Top with the hot, cheesy patty, and close with the top bun.

  • Use High Heat: The skillet should be extremely hot to get a quick sear on the meat.
