Kolacky

1. Make the Dough:

  1. In a large mixing bowl, cream together the softened butter and cream cheese until smooth.
  2. Gradually add the flour to the creamed mixture, mixing until a soft dough forms.
  3. Divide the dough into two portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.

2. Roll and Cut:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. On a floured surface, roll out one portion of the chilled dough to about 1/8-inch thickness.
  3. Use a round cookie cutter or a glass to cut out circles from the rolled dough.

3. Fill the Dough:

  1. Place a small amount (about 1/2 to 1 teaspoon) of fruit preserves in the center of each dough circle.
  2. Fold the sides of the dough over the filling, creating a triangle or a folded shape. Press the edges to seal.
  3. Repeat the rolling, cutting, and filling process with the remaining dough.

4. Bake:

  1. Place the filled Kolacky on the prepared baking sheets.
  2. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

5. Cool and Dust:

  1. Allow the Kolacky to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
  2. If desired, dust with powdered sugar before serving.
