Zucchini and Vegetable Fritters with Garlic-Cucumber Sauce

Ingredients

  • green onions, chopped
  • eggs, beaten
  • ½ cup (60 g) flour (or almond flour for low-carb)
  • ¼ cup (25 g) grated Parmesan cheese (optional, adds flavor)
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp chopped parsley or dill
