Just Chicken Pie

Ingredients:

For the Filling:

  • 2 cups cooked chicken, diced (rotisserie chicken works great)
  • 1 cup frozen peas (or fresh if preferred)
  • 1 medium carrot, diced
  • 1 cup potatoes, peeled and diced (about 1 medium potato)
  • 1/2 cup celery, finely chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth (or stock)
  • 1/2 cup milk or cream (for a richer filling)
  • 1 teaspoon dried thyme (or fresh, finely chopped)
  • Salt and pepper, to taste
  • 1 tablespoon parsley (optional, for garnish)

For the Pie:

  • 1 package (2 sheets) refrigerated pie crusts (or homemade if preferred)
  • 1 egg (for egg wash)
