Black Pepper Chicken with Mushrooms

Step 1: Marinate the Chicken

  1. In a bowl, combine chicken, soy sauce, cornstarch, and sesame oil.
  2. Toss well and let marinate for 15–20 minutes while preparing other ingredients.

Step 2: Prepare the Black Pepper Sauce

  • In a small bowl, mix soy sauces, oyster sauce, vinegar, black pepper, and sugar.
  • Set aside.

Step 3: Cook the Chicken

  1. Heat 1 tbsp oil in a wok or skillet over medium-high heat.
  2. Add chicken and stir-fry for 3–4 minutes until browned and cooked through.
  3. Remove chicken from the pan and set aside.

Step 4: Stir-Fry the Veggies

  1. In the same pan, add another 1 tbsp oil.
  2. Add garlic, ginger, onions, mushrooms, and bell peppers.
  3. Stir-fry for 2–3 minutes until slightly tender but still crisp.

Step 5: Combine & Thicken

  1. Return chicken to the pan.
  2. Pour in the prepared black pepper sauce.
  3. Stir well and add cornstarch slurry to thicken (if desired).
  4. Cook for 1–2 minutes until the sauce is glossy and coats the chicken and mushrooms.

Step 6: Serve

  • Garnish with fresh scallions or sesame seeds.
  • Serve hot over steamed rice, fried rice, or noodles.

Tips & Variations:

  • For extra heat, add sliced red chili or chili flakes.
  • Use tofu or shrimp instead of chicken for variations.
  • Add a splash of chicken broth for a saucier version.
