Step 1: Marinate the Chicken
- In a bowl, combine chicken, soy sauce, cornstarch, and sesame oil.
- Toss well and let marinate for 15–20 minutes while preparing other ingredients.
Step 2: Prepare the Black Pepper Sauce
- In a small bowl, mix soy sauces, oyster sauce, vinegar, black pepper, and sugar.
- Set aside.
Step 3: Cook the Chicken
- Heat 1 tbsp oil in a wok or skillet over medium-high heat.
- Add chicken and stir-fry for 3–4 minutes until browned and cooked through.
- Remove chicken from the pan and set aside.
Step 4: Stir-Fry the Veggies
- In the same pan, add another 1 tbsp oil.
- Add garlic, ginger, onions, mushrooms, and bell peppers.
- Stir-fry for 2–3 minutes until slightly tender but still crisp.
Step 5: Combine & Thicken
- Return chicken to the pan.
- Pour in the prepared black pepper sauce.
- Stir well and add cornstarch slurry to thicken (if desired).
- Cook for 1–2 minutes until the sauce is glossy and coats the chicken and mushrooms.
Step 6: Serve
- Garnish with fresh scallions or sesame seeds.
- Serve hot over steamed rice, fried rice, or noodles.
Tips & Variations:
- For extra heat, add sliced red chili or chili flakes.
- Use tofu or shrimp instead of chicken for variations.
- Add a splash of chicken broth for a saucier version.
