  3. Add egg, softened butter, and yeast mixture.
  4. Knead for 8–10 minutes (or use a stand mixer) until smooth and elastic.
  5. Cover and let rise in a warm place for 1 hour, or until doubled.

Step 3: Shape the Buns

  1. Punch down the dough and divide into 8–10 pieces.
  2. Flatten each piece and add 1 teaspoon of mochi filling (if using).
  3. Pinch to seal and roll into a smooth ball.
  4. Place on a parchment-lined baking sheet.

Step 4: Second Rise

  • Cover and let rise for 30–40 minutes, until puffy.

Step 5: Bake

  1. Preheat oven to 350°F (175°C).
  2. Brush tops with egg wash or melted butter.
  3. Bake for 15–18 minutes, or until lightly golden.
  4. Let cool slightly and dust with powdered sugar if desired.

Tips & Variations:

  • Add matcha powder or cocoa powder to the dough for flavored buns.
  • Fill with Nutella, sweetened red bean paste, or custard instead of mochi.
  • Best enjoyed warm, but you can reheat in the microwave for 10–15 seconds to bring back the softness.
