Step 1: Make the Mochi Filling (Optional)
- In a small nonstick pan, whisk together glutinous rice flour, milk, and sugar until smooth.
- Cook over medium heat, stirring constantly, until it forms a sticky dough.
- Stir in butter and let cool.
Step 2: Prepare the Bread Dough
- Mix warm milk, 1 tbsp sugar, and yeast. Let sit for 5–10 minutes until foamy.
- In a large bowl, combine bread flour, glutinous rice flour, remaining sugar, and salt.
- Add egg, softened butter, and yeast mixture.
- Knead for 8–10 minutes (or use a stand mixer) until smooth and elastic.
- Cover and let rise in a warm place for 1 hour, or until doubled.
Step 3: Shape the Buns
- Punch down the dough and divide into 8–10 pieces.
- Flatten each piece and add 1 teaspoon of mochi filling (if using).
- Pinch to seal and roll into a smooth ball.
- Place on a parchment-lined baking sheet.
Step 4: Second Rise
- Cover and let rise for 30–40 minutes, until puffy.
Step 5: Bake
- Preheat oven to 350°F (175°C).
- Brush tops with egg wash or melted butter.
- Bake for 15–18 minutes, or until lightly golden.
- Let cool slightly and dust with powdered sugar if desired.
Tips & Variations:
- Add matcha powder or cocoa powder to the dough for flavored buns.
- Fill with Nutella, sweetened red bean paste, or custard instead of mochi.
- Best enjoyed warm, but you can reheat in the microwave for 10–15 seconds to bring back the softness.
