Step 1: Crisp the Tortillas

  1. Cut the tortillas into strips or small squares.
  2. Heat oil in a skillet over medium-high heat.

  4. Remove and set aside on a paper towel-lined plate.

Step 2: Sauté the Veggies

  1. In the same skillet, reduce heat to medium.

Step 3: Scramble the Eggs

  1. In a bowl, whisk eggs with milk/cream, salt, and pepper.

  1. Fold the crispy tortilla pieces into the eggs.

Step 5: Serve

Plate the migas and garnish with:

  • Fresh chopped cilantro
  • Sliced avocado
  • A dollop of sour cream or crema
  • A drizzle of salsa or hot sauce

Optional Add-Ins:

  • Cooked chorizo or bacon for meat lovers
  • Diced bell peppers for color
  • A spoonful of refried beans on the side

Variations:

  • Tex-Mex Migas: Add cheese, peppers, and serve with refried beans and flour tortillas.
  • Vegan Migas: Use tofu instead of eggs and skip the cheese or use a vegan cheese.
