Step 1: Crisp the Tortillas
- Cut the tortillas into strips or small squares.
- Heat oil in a skillet over medium-high heat.
- Add tortilla pieces and fry until golden and crispy, stirring frequently (about 4–6 minutes).
- Remove and set aside on a paper towel-lined plate.
Shortcut: Use a handful of plain tortilla chips instead!
Step 2: Sauté the Veggies
- In the same skillet, reduce heat to medium.
- Add chopped onion and jalapeño (if using). Sauté for 2–3 minutes until softened.
- Stir in diced tomato and cook another minute.
Step 3: Scramble the Eggs
- In a bowl, whisk eggs with milk/cream, salt, and pepper.
- Pour eggs into the skillet with sautéed veggies.
- Stir gently and cook until eggs begin to set, about 1–2 minutes.
Step 4: Add the Tortillas & Cheese
- Fold the crispy tortilla pieces into the eggs.
- Sprinkle in shredded cheese.
- Cook just until the cheese melts and eggs are fully set — but still moist and fluffy.
Step 5: Serve
Plate the migas and garnish with:
- Fresh chopped cilantro
- Sliced avocado
- A dollop of sour cream or crema
- A drizzle of salsa or hot sauce
Optional Add-Ins:
- Cooked chorizo or bacon for meat lovers
- Diced bell peppers for color
- A spoonful of refried beans on the side
Variations:

- Vegan Migas:Â Use tofu instead of eggs and skip the cheese or use a vegan cheese.
