What Are Migas?
Migas (meaning “crumbs” in Spanish) are a traditional Mexican breakfast dish made by scrambling eggs with fried tortilla strips, onions, peppers, and often cheese or salsa. Think of them as breakfast nachos meets scrambled eggs — warm, savory, and so satisfying!
Ingredients (Serves 2–3)
- 6 small corn tortillas (or use tortilla chips)
- 2 tablespoons oil (vegetable or avocado oil)
- ½ small onion, finely chopped
- 1 jalapeño or serrano pepper, minced (optional for heat)
- 1 small tomato, diced
- 4 large eggs
- 2 tablespoons milk or cream (optional, for fluffier eggs)
- Salt and pepper to taste
- ½ cup shredded cheese (cheddar, Monterey Jack, or queso fresco)
- Fresh cilantro and sliced avocado (for garnish)
- Salsa or hot sauce (for serving)
