What is Salsa Roja?
Salsa Roja (“red sauce”) is a staple in Mexican cuisine. It’s made from roasted tomatoes, chiles, garlic, and onion, blended to a smooth or chunky texture. Whether served warm or chilled, it adds depth and heat to any dish.
Ingredients (Makes about 2 cups)
- 4 medium ripe Roma tomatoes
- 2–3 dried chile de árbol or chile guajillo (or a mix)
- 1–2 fresh jalapeños or serrano chiles (optional for heat)
- 2 garlic cloves (unpeeled)
- ¼ small white onion
- ½ teaspoon salt (adjust to taste)
- 1 tablespoon oil (vegetable or avocado oil)
- Optional: small handful of fresh cilantro or a splash of lime juice
