Ingredients (Serves 6–8)
For the Chicken Stew:
- 1 whole chicken (about 3–4 lbs), cut into pieces or 2–3 lbs bone-in, skin-on chicken thighs
- 8 cups water or chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
