Step 1: Sauté the Aromatics
- Heat oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add tomatoes and cook 5–7 minutes until soft. Mash slightly or blend if you prefer a smoother base.
Step 2: Brown the Beef
- Add ground beef to the pot.
- Break it apart and cook until browned. Drain excess fat if needed.
- Stir in cumin, oregano, salt, and pepper.
Step 3: Add Broth and Rice
- Pour in the water or broth and bring to a boil.
- Add rinsed rice, carrots, and potatoes.
- Reduce to a simmer and cook 20–25 minutes, until rice and vegetables are tender.
Step 4: Final Touches
- Stir in peas during the last 5 minutes of cooking.
- Adjust seasoning to taste.
- Let sit for 5 minutes before serving.
Serve With:
- Warm corn tortillas or crusty bread
- A squeeze of lime and sprinkle of chopped cilantro
- Side of pickled jalapeños or avocado slices
Tips:
- Add a chipotle pepper or spoon of adobo for a smoky twist
- Use brown rice for more fiber (add 10–15 mins cook time)
- For a richer flavor, blend the tomato, onion, and garlic into a smooth sauce before sautéing
