Step 1: Cook the Pasta
- Boil pasta in salted water according to package directions. Drain and set aside.
Step 2: Cook the Bacon
- In a large skillet, cook chopped bacon until crispy.
- Remove and set aside on paper towels. Leave 1–2 tbsp of bacon fat in the pan.
Step 3: Brown the Beef & Veggies
- Add ground beef to the skillet. Cook until browned.
- Add onion and garlic, and sauté until softened.
- Season with salt and pepper.
Step 4: Make the Cheeseburger Sauce
- Reduce heat to medium-low.
- Stir in cream cheese (or sour cream), milk, ketchup, and mustard.
- Let it simmer until smooth and creamy, about 5 minutes.
- Add cheddar cheese, stirring until melted and fully combined.
Step 5: Bring It All Together
- Fold in the cooked pasta and bacon.
- Stir to coat everything in the sauce.
- Let sit 2–3 minutes to thicken, then taste and adjust seasoning.
Serving Suggestions:
- Garnish with chopped dill pickles (like a real burger!)
- Sprinkle with extra cheese or scallions
- Serve with a side salad or garlic bread
Tips:
- Use smoked gouda or pepper jack for a twist
- Want it spicy? Add a pinch of chili flakes or hot sauce
- Store leftovers in the fridge for up to 3 days — reheats beautifully!
