Bacon Cheeseburger Pasta

Step 1: Cook the Pasta

  • Boil pasta in salted water according to package directions. Drain and set aside.

Step 2: Cook the Bacon

  • In a large skillet, cook chopped bacon until crispy.
  • Remove and set aside on paper towels. Leave 1–2 tbsp of bacon fat in the pan.

Step 3: Brown the Beef & Veggies

  • Add ground beef to the skillet. Cook until browned.
  • Add onion and garlic, and sauté until softened.
  • Season with salt and pepper.

Step 4: Make the Cheeseburger Sauce

  1. Reduce heat to medium-low.
  2. Stir in cream cheese (or sour cream), milk, ketchup, and mustard.
  3. Let it simmer until smooth and creamy, about 5 minutes.
  4. Add cheddar cheese, stirring until melted and fully combined.

Step 5: Bring It All Together

  • Fold in the cooked pasta and bacon.
  • Stir to coat everything in the sauce.
  • Let sit 2–3 minutes to thicken, then taste and adjust seasoning.

Serving Suggestions:

  • Garnish with chopped dill pickles (like a real burger!)
  • Sprinkle with extra cheese or scallions
  • Serve with a side salad or garlic bread

Tips:

  • Use smoked gouda or pepper jack for a twist
  • Want it spicy? Add a pinch of chili flakes or hot sauce
  • Store leftovers in the fridge for up to 3 days — reheats beautifully!
