Step 1: Marinate the Chicken
- In a large bowl or zip bag, mix: olive oil, garlic, lemon juice, herbs, paprika, salt & pepper.
- Add drumsticks, coat well, and marinate for at least 30 minutes (or overnight in fridge for best flavor).
Step 2: Preheat & Prep
- Preheat oven to 425°F (220°C).
- Line a large baking sheet with parchment paper or foil.
- Toss the chopped veggies in a bowl with olive oil, Italian seasoning, salt & pepper.
Step 3: Assemble & Roast
- Arrange marinated drumsticks on the baking sheet.
- Scatter veggies around the chicken in a single layer.
- Roast for 35–45 minutes, turning once halfway through, until chicken is cooked through (internal temp: 165°F/74°C) and veggies are tender and golden.
Step 4: Serve
- Garnish with fresh herbs and a squeeze of lemon if desired.
- Serve hot with crusty bread, rice, or couscous on the side.
Storage:
- Store leftovers in the fridge up to 4 days
- Reheat in oven or air fryer for crispy skin again
