Step 1: Marinate the Chicken

  1. In a large bowl or zip bag, mix: olive oil, garlic, lemon juice, herbs, paprika, salt & pepper.
  2. Add drumsticks, coat well, and marinate for at least 30 minutes (or overnight in fridge for best flavor).

Step 2: Preheat & Prep

  1. Preheat oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper or foil.
  3. Toss the chopped veggies in a bowl with olive oil, Italian seasoning, salt & pepper.

Step 3: Assemble & Roast

  1. Arrange marinated drumsticks on the baking sheet.
  2. Scatter veggies around the chicken in a single layer.
  3. Roast for 35–45 minutes, turning once halfway through, until chicken is cooked through (internal temp: 165°F/74°C) and veggies are tender and golden.
