For the Chicken:

- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped (or 1 tsp dried)
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ tsp paprika
- Salt & pepper to taste
For the Veggie Medley:
- 2Â carrots, peeled & sliced
- 1Â zucchini, chopped
- 1Â red bell pepper, chopped
- 1Â red onion, cut into wedges
- 1 ½ cups baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt & pepper to taste
