Garlic Chicken Veggie Stir-Fry with Creamy Rice

Ingredients (Serves 4)

For the Stir-Fry:

  • 1 lb (450g) boneless chicken breast or thighs, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup broccoli florets
  • red bell pepper, sliced
  • carrot, julienned
  • ½ cup snap peas or green beans (optional)
  • Salt & pepper to taste
  • Optional: 1 tbsp oyster sauce or hoisin for extra flavor

For the Garlic Sauce:

  • ¼ cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lemon juice
  • 1 tsp cornstarch (mixed with 1 tbsp water)

For the Creamy Rice:

  • 1 cup long-grain white rice (or jasmine rice)
  • 2 ½ cups milk (whole milk or half milk/half broth for lighter option)
  • 1 tbsp butter
  • ½ tsp garlic powder
  • Salt to taste
  • Optional: ½ cup grated Parmesan or 2 tbsp cream cheese for extra creaminess
