Ingredients:

Chicken & Seasoning:

  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium breasts), cut into chunks
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and black pepper to taste

The Skillet Mix:

  • 1 cup canned black beans, drained & rinsed
  • 1 cup frozen corn kernels (or canned, drained)
  • 1 cup diced red bell pepper
  • 1/2 cup chopped red onion
  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup fresh cilantro, chopped (optional)
  • Juice of 1 lime
