Ingredients:

For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin (optional)
  • Salt + pepper to taste
  • Juice of 1/2 lime

For the Salad Base:

  • 4 cups mixed greens (romaine, spinach, arugula — your pick)
  • 1 ripe avocado, sliced or cubed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 1/4 cup roasted pepitas or sunflower seeds for crunch

Creamy Cilantro-Lime Dressing (game changer):

  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp olive oil
  • Juice of 1 lime
  • 1 garlic clove
  • 1 tbsp chopped fresh cilantro
  • Salt + pepper to taste
  • Optional: splash of honey or dash of chili flakes

Blend it all until smooth and creamy — adjust lime and salt to your liking.
