Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup raisins or currants (optional)
  • 2/3 to 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • Jam and clotted cream (for serving)

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter pieces to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs. If you like, you can leave some pea-sized bits of butter for extra flakiness.
  4. If you’re using raisins or currants, stir them into the flour mixture.
  5. In a separate bowl, combine 2/3 cup of milk and vanilla extract.
  6. Make a well in the center of the dry ingredients and pour in the milk mixture. Gently stir until just combined. If the dough is too dry, add a little more milk until it comes together.
  7. Turn the dough out onto a lightly floured surface. Knead it gently a few times to bring it together, then pat it into a circle about 3/4-inch thick.
  8. Using a round biscuit cutter, cut out scones and place them on the prepared baking sheet.
  9. In a small bowl, beat the egg and brush it over the tops of the scones for a golden finish.
  10. Bake in the preheated oven for 12-15 minutes or until the tops are golden brown.
  11. Allow the scones to cool on a wire rack. Serve with jam and clotted cream.
