Ingredients (Makes 2 sandwiches)
- 4 hard-boiled eggs, peeled
- 2½ tablespoons mayonnaise
- 1 teaspoon Dijon mustard (or yellow mustard if you prefer)
- 1 tablespoon finely chopped celery (for crunch)
- 1 teaspoon finely chopped red onion or green onion
- Salt and black pepper to taste
