Ingredients
For the Marinade:
- 4–6 pieces of chicken (drumsticks, thighs, or a mix; bone-in and skin-on work best)
- 2 cups buttermilk
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika (or regular paprika)
- Optional: 1/4 teaspoon cayenne pepper (for a touch of heat)
For the Crispy Coating:
- 1 cup all-purpose flour
- 1/2 cup panko breadcrumbs (for extra crunch)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Optional: 1/4 teaspoon dried thyme or oregano
For Finishing:
- Cooking spray or 2–3 tablespoons olive oil
