Baked Fried Chicken

Ingredients

For the Marinade:

  • 4–6 pieces of chicken (drumsticks, thighs, or a mix; bone-in and skin-on work best)
  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • Optional: 1/4 teaspoon cayenne pepper (for a touch of heat)

For the Crispy Coating:

  • 1 cup all-purpose flour
  • 1/2 cup panko breadcrumbs (for extra crunch)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Optional: 1/4 teaspoon dried thyme or oregano

For Finishing:

  • Cooking spray or 2–3 tablespoons olive oil
