For the Salmon

- 2 tablespoons olive oil (divided)
- Salt and freshly ground black pepper, to taste
For the Blackening Spice Mix

For the Spinach-Parmesan Filling
- 3 cups fresh baby spinach (loosely packed)
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese (plus extra for garnish, if desired)
- Zest of 1 lemon or a squeeze of lemon juice (optional, for brightness)
- Salt and pepper, to taste
