Ingredients:

For the Rice:

  • 1 cup long-grain rice (or basmati rice)
  • 2 cups chicken broth (or water with a bouillon cube)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup frozen peas (optional)
  • 1 teaspoon ground cumin (optional for extra flavor)
  • 1 tablespoon olive oil (for cooking the rice)

For Garnish:

  • Fresh cilantro or parsley, chopped
  • Lemon wedges (optional)
