Peach Bliss Cupcakes with Vanilla Buttercream

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

Step 2: Prepare the Peach Puree

Peel the peaches and chop them into small, even pieces. In a blender or food processor, pulse the peaches until they form a smooth puree. Set aside.

Step 3: Make the Cupcake Batter

In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy—about 3-4 minutes.

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Next, add the peach puree to the wet ingredients and mix until well combined.

In a separate bowl, combine the sour cream and milk. Alternately add the flour mixture and the sour cream mixture to the wet ingredients, starting and ending with the dry ingredients. Mix just until combined. Be careful not to overmix.

Gently fold in the finely chopped fresh peaches.

Step 4: Bake the Cupcakes

Using an ice cream scoop or spoon, fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cupcakes from the oven and allow them to cool in the tin for 5 minutes. Then, transfer them to a wire rack to cool completely.

Step 5: Make the Vanilla Buttercream

In a large mixing bowl, beat the softened butter on medium speed until creamy—about 2-3 minutes. Gradually add the powdered sugar, one cup at a time, mixing on low speed at first to avoid a sugar cloud!

Add the vanilla extract, heavy cream, and a pinch of salt. Beat on high speed until the buttercream is fluffy and smooth—about 3-4 minutes. If desired, add a small amount of peach puree for an extra peachy flavor.

Step 6: Decorate the Cupcakes

Once the cupcakes are completely cooled, use a piping bag fitted with a decorative tip to pipe the vanilla buttercream onto each cupcake. Garnish with a small peach slice or a sprinkle of peach crumble (optional).
