Ingredients:

For the Soup:

  • 1 lb (450 g) ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups (480 ml) beef broth
  • 1 (14.5 oz/410 g) can diced tomatoes, with juice
  • 1 (14.5 oz/410 g) can Ro-Tel diced tomatoes and green chilies
  • 1 (15 oz/425 g) can kidney beans, drained and rinsed
  • 1 (15 oz/425 g) can pinto beans, drained and rinsed
  • 1 (15 oz/425 g) can corn kernels, drained
  • 2 medium russet potatoes, peeled and diced
  • 1 cup (240 ml) water
  • 1 tablespoon (15 g) chili powder
  • 1 teaspoon (5 g) cumin
  • 1/2 teaspoon (2.5 g) paprika
  • Salt and pepper, to taste
  • 1/2 teaspoon (2.5 g) cayenne pepper (optional, for extra heat)

  • Fresh cilantro
  • Sliced jalapeños
  • Crushed tortilla chips
