Step 1: Prep the Cherries

Step 2: Make the Fondant Center
- In a small bowl, mix butter, corn syrup, vanilla, and salt until smooth.
- Gradually stir in powdered sugar until a soft dough forms (it should be easy to roll, not sticky).
- Take about 1 teaspoon of fondant, flatten it into a small disk, and wrap it around each cherry to completely cover it.
- Place the wrapped cherries on a parchment-lined baking sheet.
- Chill in the refrigerator for 20–30 minutes to firm up.
Step 3: Melt the Chocolate
- In a heatproof bowl, melt chocolate and shortening together over a double boiler or in the microwave (20-second intervals, stirring between each).
- Stir until smooth and glossy.
Step 4: Dip the Cherries
- Hold each cherry by the stem and dip it into the melted chocolate, coating completely.
- Let excess chocolate drip off before placing it back on the parchment.
- Chill for about 20–30 minutes until set.
Step 5: (Optional) Let Them Ripen
If you want that gooey cordial-style center:
- Store the dipped cherries in an airtight container at room temperature for 1–2 weeks.
- During this time, the fondant dissolves into a smooth, liquid filling.
