Step 1: Prep the Cherries

  1. Drain maraschino cherries and place them on a paper towel–lined plate.
  2. Pat dry thoroughly — moisture can cause chocolate to seize.
  3. Let them air dry for about 30 minutes while you prepare the coating.

Step 2: Make the Fondant Center

  1. In a small bowl, mix butter, corn syrup, vanilla, and salt until smooth.
  2. Gradually stir in powdered sugar until a soft dough forms (it should be easy to roll, not sticky).
  3. Take about 1 teaspoon of fondant, flatten it into a small disk, and wrap it around each cherry to completely cover it.
  4. Place the wrapped cherries on a parchment-lined baking sheet.
  5. Chill in the refrigerator for 20–30 minutes to firm up.

Step 3: Melt the Chocolate

  1. In a heatproof bowl, melt chocolate and shortening together over a double boiler or in the microwave (20-second intervals, stirring between each).
  2. Stir until smooth and glossy.

Step 4: Dip the Cherries

  1. Hold each cherry by the stem and dip it into the melted chocolate, coating completely.
  2. Let excess chocolate drip off before placing it back on the parchment.
  3. Chill for about 20–30 minutes until set.

Step 5: (Optional) Let Them Ripen

If you want that gooey cordial-style center:

  1. Store the dipped cherries in an airtight container at room temperature for 1–2 weeks.
  2. During this time, the fondant dissolves into a smooth, liquid filling.

  • Make sure cherries are fully dry before wrapping.
  • Store in a cool, dry place — not the fridge, which can cause condensation.
