Bacon and Tomato Sandwiches

Step 1: Cook the Bacon

  1. Lay bacon slices in a cold skillet (no need to preheat).
  2. Turn the heat to medium and cook until crispy, about 8–10 minutes, flipping occasionally.
  3. Transfer bacon to a paper towel–lined plate to drain excess grease.

(Optional: For less mess, bake bacon at 400°F / 200°C for 15–20 minutes on a parchment-lined baking sheet.)

Step 2: Prepare the Bread

  1. Toast the bread slices until golden brown.
  2. (Optional) Lightly butter each slice for extra flavor and crispness.

Step 3: Assemble the Sandwich

  1. Spread mayonnaise generously on one side of each slice of toast.
  2. Layer sliced tomatoes evenly on two of the bread slices.
  3. Sprinkle a bit of salt and pepper over the tomatoes to bring out their flavor.
  4. Add crispy bacon on top.
  5. Place the remaining slices of bread on top, mayo-side down.

Step 4: Serve

  1. Slice each sandwich diagonally for easy eating.
  2. Serve warm with chips, fries, or a simple green salad.
