Garlic Butter Lobster Tails Recipe

Step 1: Prepare the Lobster

  1. If using frozen lobster tails, thaw completely in the refrigerator overnight or under cold water for 30–40 minutes.
  2. Place each tail on a cutting board with the shell facing up.
  3. Using sharp kitchen shears, cut through the top shell lengthwise from the wide end to just before the tail fins.
  4. Gently pry the shell apart and lift the lobster meat, resting it on top of the shell while keeping the end attached — this is called butterflying.
  5. Pat the meat dry with paper towels.

Step 2: Make the Garlic Butter Sauce

  1. In a small bowl, whisk together melted butter, garlic, lemon juice, zest, paprika, salt, and pepper.
  2. Brush the mixture generously over the lobster meat, reserving some for after cooking.

Step 3: Broil the Lobster

  1. Preheat your oven’s broiler to High (500°F / 260°C).
  2. Line a baking sheet with foil and arrange the lobster tails, shell side down.
  3. Place the sheet on the middle rack — about 6 inches from the heat.
  4. Broil for 8–10 minutes, depending on tail size, until the meat turns opaque and lightly browned on top.

Tip: Lobster is perfectly done when it reaches an internal temperature of 135–140°F (57–60°C).

Step 4: Finish and Serve

  1. Remove from the oven and brush again with the reserved garlic butter.
  2. Sprinkle with chopped parsley.
  3. Serve immediately with lemon wedges and optional melted butter for dipping.

Tips

  • Don’t overcook — lobster gets rubbery fast! Check often after 7 minutes.
  • For a smoky twist, add a pinch of cayenne or chili flakes to the butter.
  • Want to grill instead? Place shell side down on medium heat for 6–8 minutes.
