Step 1: Prepare the Lobster
- If using frozen lobster tails, thaw completely in the refrigerator overnight or under cold water for 30–40 minutes.
- Place each tail on a cutting board with the shell facing up.
- Using sharp kitchen shears, cut through the top shell lengthwise from the wide end to just before the tail fins.
- Gently pry the shell apart and lift the lobster meat, resting it on top of the shell while keeping the end attached — this is called butterflying.
- Pat the meat dry with paper towels.
Step 2: Make the Garlic Butter Sauce
- In a small bowl, whisk together melted butter, garlic, lemon juice, zest, paprika, salt, and pepper.
- Brush the mixture generously over the lobster meat, reserving some for after cooking.
Step 3: Broil the Lobster
- Preheat your oven’s broiler to High (500°F / 260°C).
- Line a baking sheet with foil and arrange the lobster tails, shell side down.
- Place the sheet on the middle rack — about 6 inches from the heat.
- Broil for 8–10 minutes, depending on tail size, until the meat turns opaque and lightly browned on top.
Tip: Lobster is perfectly done when it reaches an internal temperature of 135–140°F (57–60°C).
Step 4: Finish and Serve
- Remove from the oven and brush again with the reserved garlic butter.
- Sprinkle with chopped parsley.
- Serve immediately with lemon wedges and optional melted butter for dipping.
Tips
- Don’t overcook — lobster gets rubbery fast! Check often after 7 minutes.
- For a smoky twist, add a pinch of cayenne or chili flakes to the butter.
- Want to grill instead? Place shell side down on medium heat for 6–8 minutes.
