Step 1: Marinate the Chicken
- Place sliced chicken breasts in a bowl and cover with buttermilk.
- Marinate for at least 30 minutes (or overnight for extra tenderness).
Step 2: Prepare the Pasta
- Cook pasta according to package instructions until al dente.
- Reserve ½ cup of pasta water and drain the rest.
Step 3: Make the Alfredo Sauce
- In a large skillet, melt butter over medium heat.
- Add garlic and sauté for 1 minute until fragrant.
- Stir in heavy cream and bring to a gentle simmer.
- Add Parmesan cheese, whisking until smooth and creamy.
- Adjust thickness with reserved pasta water if needed.
- Season with salt, pepper, and nutmeg (if using).
- Toss cooked pasta into the sauce and coat well.
Step 4: Fry the Chicken
- In a shallow dish, mix flour, cornstarch, garlic powder, paprika, salt, and pepper.
- Heat oil in a skillet to 350°F (175°C).
- Remove chicken from buttermilk, dredge in flour mixture, and shake off excess.
- Fry for 4–5 minutes per side until golden brown and crispy.
- Place on paper towels to drain.
Step 5: Assemble
- Serve Alfredo-coated pasta on plates or in bowls.
- Slice fried chicken and place on top.
- Garnish with fresh parsley and an extra sprinkle of Parmesan.
