Strawberry Tart

This Strawberry Tart features a crisp, buttery tart shell filled with vanilla pastry cream and topped with sweet, fresh strawberries. It’s perfect for spring and summer gatherings or as a light dessert after dinner.

Ingredients (Serves 6–8)

For the Tart Crust:

  • 1¼ cups (150 g) all-purpose flour
  • ½ cup (115 g) unsalted butter, cold and cubed
  • ¼ cup (50 g) granulated sugar
  • 1 egg yolk
  • 1–2 tablespoons cold water

For the Pastry Cream Filling:

  • 1½ cups (360 ml) milk
  • 3 egg yolks
  • â…“ cup (65 g) sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter

For the Topping:

  • 1–2 cups fresh strawberries, halved or sliced
  • Optional: apricot jam for glazing
