Rich, Moist & Packed with Dried Fruits
This traditional Fruit Cake is dense, flavorful, and filled with mixed dried fruits and nuts — perfect for holidays or special occasions.
Ingredients
- 2 cups mixed dried fruits (raisins, cranberries, cherries)
- ½ cup chopped nuts (optional)
- ½ cup orange juice or rum (for soaking)
- 1 cup butter, softened
- 1 cup brown sugar
- 4 large eggs
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- Zest of 1 orange and 1 lemon
- 1 teaspoon vanilla extract
Instructions
- Soak Fruits: Soak dried fruits in orange juice or rum for at least 1 hour or overnight.
- Preheat Oven: 325°F (160°C). Grease a loaf pan.
- Cream Butter & Sugar: Beat until fluffy. Add eggs one at a time.
- Combine Dry Ingredients: Flour, baking powder, cinnamon, nutmeg, and salt.
- Mix: Fold dry ingredients into the butter mixture, then add soaked fruits, nuts, zest, and vanilla.
- Bake: Pour batter into the pan and bake for 60–70 minutes or until a toothpick comes out clean.
- Cool & Serve: Cool completely before slicing.
