If Using Dried Beans:

  1. Rinse beans and soak overnight or quick-boil for 5 minutes and let sit 1 hour.
  2. Drain, then cook in fresh water or broth for 1–1.5 hours until tender. Set aside.

Step 1: Cook the Meats

  1. In a large pot, cook bacon until crispy. Remove and set aside.
  2. In the bacon fat, cook chorizo/sausage until browned.
  3. Add onion, garlic, jalapeños, and tomatoes. Sauté 5–6 minutes.

Step 2: Combine & Simmer

  1. Add the cooked beans (or canned, rinsed beans).
  2. Pour in about 2 cups of the bean cooking liquid or broth.
  3. Stir in bacon, season with salt, pepper, and optional spices.
  4. Simmer uncovered for 20–30 minutes until slightly thickened and flavorful.

Step 3: Finish with Cilantro

  • Stir in fresh cilantro before serving. Serve warm with tortillas or as a side.

  • Tacos (carne asada, barbacoa, or carnitas)
  • Grilled meats
  • Mexican rice
  • Fresh corn tortillas

Tips:

  • Use canned beans to save time
  • Add diced ham, leftover pulled pork, or hot dogs for variation
  • Make it spicy with chipotle or add beer to the broth for extra depth
