1: Marinate the Beef
- In a large bowl or zip-top bag, combine all marinade ingredients.
- Add steak, coat well, and refrigerate for at least 2 hours, preferably overnight.
Step 2: Grill the Meat
- Heat a grill or grill pan over high heat.
- Remove steak from marinade and pat dry (for better sear).
- Grill 3–5 minutes per side, depending on thickness and desired doneness.
- Let rest for 5–10 minutes, then slice thin against the grain, and chop into small taco-sized pieces.
Step 3: Warm the Tortillas
- Heat corn tortillas in a dry skillet, directly over flame, or wrapped in foil in the oven until warm and pliable.
Step 4: Assemble Tacos
- Add a few spoonfuls of chopped carne asada to each tortilla.
- Top with diced onion, chopped cilantro, and a squeeze of lime.
- Serve with your favorite salsas or guacamole on the side.
Pro Tips:
- Char the tortillas a little for that street-style smoky flavor
- Use leftover steak for taco salads or quesadillas
- Want more heat? Add a drizzle of chipotle sauce or sprinkle of crushed chili flakes
