Ingredients (Serves 6)

  • 2 large cucumbers, peeled and sliced
  • 2–3 medium tomatoes, cut into wedges or thick slices
  • 1 medium red or yellow onion, thinly sliced
  • ½ cup white vinegar (or apple cider vinegar for a milder flavor)
  • ¼ cup water
  • 2 tbsp olive oil
  • 1 tbsp sugar (adjust to taste)
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: ½ tsp dried oreganobasil, or Italian seasoning
  • Optional garnish: fresh parsley or dill
