Ingredients (Serves 4)
For the Chicken:
- 1 lb boneless skinless chicken breast (or thighs), diced
- 1 tbsp low-sodium soy sauce
- 1 tsp cornstarch
- Salt & pepper
For the Rice & Veggies:
- 3 cups cooked brown rice or quinoa (preferably day-old for best texture)
- 2 eggs, lightly beaten
- 1 cup frozen peas & carrots (or chopped fresh veggies)
- 2 green onions, sliced
- 1 tbsp toasted sesame oil
- 1 tsp minced garlic
- Optional: 1 tsp fresh grated ginger
For the Honey Sesame Sauce:
- 2 tbsp honey
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sriracha or chili garlic sauce (optional for heat)
- 1 tsp cornstarch + 2 tsp water (slurry)
