Healthy High Protein Honey Sesame Chicken Fried Rice

Golden stir-fried rice tossed with lean chicken, eggs, veggies, and a sticky-sweet honey sesame glaze — macro-friendly and full of flavor!

Ingredients (Serves 4)

For the Chicken:

  • 1 lb boneless skinless chicken breast (or thighs), diced
  • 1 tbsp low-sodium soy sauce
  • 1 tsp cornstarch
  • Salt & pepper

For the Rice & Veggies:

  • 3 cups cooked brown rice or quinoa (preferably day-old for best texture)
  • 2 eggs, lightly beaten
  • 1 cup frozen peas & carrots (or chopped fresh veggies)
  • 2 green onions, sliced
  • 1 tbsp toasted sesame oil
  • 1 tsp minced garlic
  • Optional: 1 tsp fresh grated ginger

For the Honey Sesame Sauce:

  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sriracha or chili garlic sauce (optional for heat)
  • 1 tsp cornstarch + 2 tsp water (slurry)
