Stuffed Bell Peppers

Tender bell peppers filled with a flavorful, meaty rice mixture and topped with melty cheese — baked to perfection!

Ingredients (Serves 4–6)

For the Peppers:

  • 4–6 large bell peppers (any color)
  • 1 tbsp olive oil
  • Salt to taste

For the Filling:

  • 1 lb ground beef (or turkey)
  • 1 cup cooked rice (white, brown, or even cauliflower rice)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes, drained
  • 1 tbsp tomato paste (optional, for richer flavor)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt & pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese, divided
