Step 1: Prepare the Dough
- In a mixing bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, whisk together egg, lukewarm water, and oil.
- Gradually add wet ingredients to dry, mixing until a shaggy dough forms.
- Knead for 5–7 minutes until smooth.
- Cover and rest for 2 hours at room temperature (or overnight in fridge for better texture).
Step 2: Shape the Dough
- On a lightly floured surface, gently roll dough into a rectangle (about ¼ inch thick).
- Cut into 1-inch wide strips about 6 inches long.
- Stack two strips on top of each other, then press down the center with a chopstick to adhere.
- Cover with a towel and rest for 10–15 minutes before frying.
Step 3: Fry
- Heat oil in a deep pot or pan to 350–375°F (175–190°C).
- Stretch each dough pair gently to about 8–10 inches long, then carefully drop into the oil.
- Fry one at a time, turning constantly with chopsticks until golden and puffed (about 2–3 minutes).
- Remove and drain on paper towels.
Tips for Success:
- Don’t skip resting time — it’s what gives Youtiao its stretch and bubbles!
- Keep oil hot but not smoking; too low and the dough absorbs oil, too hot and it burns quickly.
- Pair with soy milk, rice porridge, or enjoy with a dash of sugar or chili sauce.
Storage:
- Best eaten fresh and hot
- Reheat in toaster oven or air fryer for crispy leftovers
- Can be frozen after frying and reheated later
