Crockpot Sausage and Potatoes

A cozy, one-pot meal made with sliced sausage, seasoned potatoes, and optional veggies — slow-cooked until tender, flavorful, and family-approved.

Ingredients (Serves 4–6):

  • 1 ½ lbs baby potatoes or russet potatoes, diced
  • 1 lb smoked sausage (kielbasa or andouille), sliced into coins
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • Salt & pepper to taste
  • 2 tbsp olive oil or melted butter
  • Optional: 1 bell pepper, chopped
  • Optional: ½ cup chicken broth (for extra moisture)
