Step 1: Prep the Ingredients
- Wash and dice the potatoes (leave skin on for rustic feel)
- Slice sausage into coins
- Chop onions, garlic, and optional veggies
Step 2: Combine in Crockpot
- Add potatoes, sausage, onion, garlic, and optional bell pepper to the crockpot.
- Sprinkle with paprika, thyme, salt, and pepper.
- Drizzle with olive oil or butter, toss to coat.
- (Optional) Pour in chicken broth for a slightly saucier dish.
Step 3: Cook
- Low: 6–7 hours
- High: 3–4 hours
- Stir halfway through if possible to ensure even cooking.
Step 4: Serve
- Serve hot with fresh parsley, grated cheese, or a dollop of sour cream.
- Pairs well with a simple green salad or warm bread.
Storage:
- Keeps in the fridge for up to 4 days
- Reheat in microwave or skillet with a splash of broth
