Beef Pasties

  1. Prepare the Pastry Dough:
    • In a large bowl, whisk together the flour and salt. Add the cold cubed butter and use a pastry cutter or your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat from the skillet.
    • Add the chopped onion, diced carrots, diced potatoes, minced garlic, tomato paste, Worcestershire sauce, and dried thyme to the skillet with the cooked ground beef. Cook for 5-7 minutes, or until the vegetables are slightly softened. Season with salt and pepper to taste. Remove from heat and stir in the frozen peas. Allow the filling to cool slightly.

    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the chilled pastry dough to about 1/8 inch thickness. Use a round cutter or a small plate to cut out circles, approximately 5-6 inches in diameter.
    • Place a spoonful of the beef and vegetable filling onto one half of each pastry circle, leaving a border around the edge. Fold the other half of the pastry over the filling to create a half-moon shape. Press the edges together firmly to seal, and crimp with a fork to secure. Repeat with the remaining dough and filling.
  2. Bake the Pasties:
    • Place the assembled pasties on the prepared baking sheet. Brush the tops of the pasties with beaten egg to create a golden crust.
    • Bake in the preheated oven for 25-30 minutes, or until the pasties are golden brown and cooked through.
  3. Serve:
    • Allow the Beef Pasties to cool slightly before serving. Enjoy them warm or at room temperature as a delicious snack or meal.
