    • In a large mixing bowl, combine the Greek yogurt and granulated sugar. Mix until well combined.
    • Add the eggs, one at a time, mixing well after each addition.
    • Stir in the vegetable oil, vanilla extract, and lemon zest (if using) until smooth and creamy.
