Voodoo Egg Rolls

Ingredients (Makes 10–12 egg rolls)

For the Filling:

  • 1 tbsp olive oil
  • ½ lb andouille sausage or spicy pork sausage, finely chopped or crumbled
  • ½ cup bell peppers, finely diced (mix of red, green, or yellow)
  • ¼ cup red onion, diced
  • 1 clove garlic, minced
  • 1 tsp Creole seasoning (like Tony Chachere’s or homemade)
  • ½ tsp smoked paprika
  • ½ cup cream cheese, softened
  • 1 cup shredded pepper jack or cheddar cheese
  • Salt & pepper, to taste
  • 10–12 egg roll wrappers

For Frying:

  • Vegetable or canola oil

Voodoo Dipping Sauce (Optional but amazing)

  • ½ cup mayonnaise
  • 1 tbsp hot sauce (Crystal, Louisiana, or Sriracha)
  • 1 tbsp ketchup
  • 1 tsp Cajun seasoning
  • 1 tsp honey
  • Splash of lime juice

Mix together and chill until ready to serve.
